Ingredients
- 2 ½ tablespoon butter
- ½ cup chopped carrots
- ½ cup chopped celery
- 1 clove garlic, minced
- 6 cups broth
- 1 bunch of spinach
- Himalayan crystal salt
- Pepper to taste
Instructions
- Melt butter in a stockpot over medium heat. Add carrots, celery, garlic and sweet potato. Cook for 1 to 2 minutes. Pour in chicken broth and bring to a boil. Turn heat down, simmer until potatoes are cooked. Stir in spinach until tender, 2-3 minutes.
- Put into a blender until smooth. Serve with cream fresh. Bon appetit!
I made a few changes from the original recipe and turned out supper delicious.
